Pork Tenderloin-Demarle style!

I love being a Demarle rep and love the product so much! So the other night I wanted to cook a pork tenderloin and used my Sponge cake mold. This was so yummy and the clean up was a breeze! Nothing sticks to the mold! Just wash out with a soapy sponge!
Preheat oven to 400 degrees
Peel and slice 3 apples and place into bowl, add a handful or more of dried cranberries (or raisins) add a few tablespoons of brown sugar, and a few dashed of cinnamon. Add 1 tablespoon of corn starch and mix all together. Put mixture around tenderloin in the mold. (you don't spray or grease the mold!!!!) Cover mold with foil and bake for 30 minutes. Then uncover, and bake til the meat is cooked through to 160 degrees! I dumped the entire contents onto a serving platter and was done!
This is the mold afterwards. Look how nothing burned and stuck to the sides! You know this wouldn't happen in a regular baking dish!
